Sloppy Joe Rice Bowls
Ingredients
- 1 (10-oz) pkg frozen veggie crumbles
- ½ cup chopped onion
- 1 small green bell pepper, chopped
- 1 (8-oz) can tomato sauce
- ⅓ cup ketchup
- 1 Tbsp brown sugar
- 2 tsp chili powder
- ½ tsp ground cumin
- 2 (8-oz) pkg frozen brown rice
- ¾ cup shredded reduced-fat Cheddar cheese
Instructions
- Cook crumbles, onion, and bell pepper in a large skillet coated cooking spray over medium-high heat 7 to minutes or until vegetables are browned and tender, stirring occasionally.
- Stir in tomato sauce, ketchup, brown sugar, chili powder, and cumin; bring to a boil, reduce heat, and simmer 10 minutes.
- Microwave rice according to package directions. Serve sloppy joe mixture over rice; sprinkle with cheese.
