Sloppy Joe Rice Bowls

Ingredients

  • 1 (10-oz) pkg frozen veggie crumbles
  • ½ cup chopped onion
  • 1 small green bell pepper, chopped
  • 1 (8-oz) can tomato sauce
  • ⅓ cup ketchup
  • 1 Tbsp brown sugar
  • 2 tsp chili powder
  • ½ tsp ground cumin
  • 2 (8-oz) pkg frozen brown rice
  • ¾ cup shredded reduced-fat Cheddar cheese

Instructions

  1. Cook crumbles, onion, and bell pepper in a large skillet coated cooking spray over medium-high heat 7 to minutes or until vegetables are browned and tender, stirring occasionally.
  2. Stir in tomato sauce, ketchup, brown sugar, chili powder, and cumin; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Microwave rice according to package directions. Serve sloppy joe mixture over rice; sprinkle with cheese.
