Chicken, Avocado, and Bacon Sandwiches

Ingredients

  • 4 slices center cut bacon
  • 1 avocado, halved
  • 1 tsp fresh lemon juice
  • 8 (1-oz) slices whole-grain sandwich bread, toasted
  • ¼ cup sliced roasted red peppers, well drained
  • 1 cup shredded rotisserie chicken breast
  • 4 (0.67-oz) slices reduced-fat Swiss cheese
  • 4 leaves green leaf lettuce

Instructions

  1. Cook bacon in a nonstick skillet over medium-high heat until crisp; drain.
  2. Mash avocado with lemon juice until smooth; spread over bread.
  3. Layer 4 bread slices with red peppers, chicken, cheese, bacon, and lettuce. Top with remaining bread, avocado sides down.

  • 2 cups seedless grapes (any color)
