Chicken, Avocado, and Bacon Sandwiches
Chilled GrapesIngredients
- 4 slices center cut bacon
- 1 avocado, halved
- 1 tsp fresh lemon juice
- 8 (1-oz) slices whole-grain sandwich bread, toasted
- ¼ cup sliced roasted red peppers, well drained
- 1 cup shredded rotisserie chicken breast
- 4 (0.67-oz) slices reduced-fat Swiss cheese
- 4 leaves green leaf lettuce
Instructions
- Cook bacon in a nonstick skillet over medium-high heat until crisp; drain.
- Mash avocado with lemon juice until smooth; spread over bread.
- Layer 4 bread slices with red peppers, chicken, cheese, bacon, and lettuce. Top with remaining bread, avocado sides down.
