Blueberry Pancakes

Ingredients
- 1⅓ cups high-protein pancake mix (or use whole-grain pancake mix)
- 1 Tbsp sugar
- 2 large eggs, lightly beaten
- 1 Tbsp canola oil
- ¾ cup water
- 1 tsp vanilla extract
- 1 (4.4-oz) pkg blueberries
- 4 tsp butter
- 4 Tbsp maple syrup
Instructions
- Whisk together pancake mix, sugar, eggs, oil, water, and vanilla in a large bowl. Gently fold in berries.
- Pour batter by about ¼ cupfuls onto a hot nonstick skillet coated with cooking spray over medium heat.
- Cook until tops are covered with bubbles. Turn and cook other sides. Serve with butter and syrup.
