Blueberry Pancakes

Ingredients

  • 1⅓ cups high-protein pancake mix (or use whole-grain pancake mix)
  • 1 Tbsp sugar
  • 2 large eggs, lightly beaten
  • 1 Tbsp canola oil
  • ¾ cup water
  • 1 tsp vanilla extract
  • 1 (4.4-oz) pkg blueberries
  • 4 tsp butter
  • 4 Tbsp maple syrup

Instructions

  1. Whisk together pancake mix, sugar, eggs, oil, water, and vanilla in a large bowl. Gently fold in berries.
  2. Pour batter by about ¼ cupfuls onto a hot nonstick skillet coated with cooking spray over medium heat.
  3. Cook until tops are covered with bubbles. Turn and cook other sides. Serve with butter and syrup.
