Open-Faced Chicken Parmesan Sandwiches

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 (24-oz) jar pasta sauce
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 1 (16-oz) loaf garlic bread
  • ½ cup grated Parmesan cheese (from a can)

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done. Add pasta sauce to skillet, and cook until thoroughly heated.
  3. Sprinkle chicken with mozzarella; cover, and cook 1 minute or until cheese is melted.
  4. Meanwhile, bake garlic bread according to package directions; cut into 6 pieces, and divide among 6 plates.
  5. Top bread pieces with saucy chicken; sprinkle with Parmesan.

  • 2 (12-oz) pkg steam-in-bag green beans
  • 2 Tbsp butter

Side Dish Instructions

  1. Cook green beans according to package directions.
  2. Toss green beans with butter in a serving bowl; season with salt and pepper to taste.
