Oatmeal-Cinnamon Pancakes
Brown Sugar Bacon and Grapes
Ingredients
- 1 cup quick-cooking oats
- 2 cups all-purpose flour
- 3 Tbsp sugar
- 1 Tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- 2½ cups buttermilk
- 2 large eggs, lightly beaten
- 1 (8-oz) bottle pancake syrup
Instructions
- Cook oatmeal according to package directions; set aside.
- Stir together flour, sugar, baking powder, baking soda, salt, and cinnamon in a medium bowl.
- Stir together buttermilk, cooked oatmeal, and eggs; add to flour mixture, stirring to blend.
- Spray a griddle with cooking spray; preheat to medium heat. Drop ¼ cup batter for each pancake onto hot griddle.
- Cook 2 to 3 minutes or until tops are covered with bubbles; turn and cook other side. Serve with syrup.

- ¼ cup packed brown sugar
- 1 (16-oz) pkg bacon
- 1 lb seedless red grapes
Side Dish Instructions
- Preheat oven to 350°F. Place brown sugar in a shallow dish; dredge bacon in sugar, shaking off excess.
- Arrange bacon in a single layer on a wire rack on a foil-lined rimmed baking sheet. Bake 15 to 20 minutes or until bacon is crisp.
- Serve bacon and grapes on each plate.
