Oatmeal-Cinnamon Pancakes

Ingredients

  • 1 cup quick-cooking oats
  • 2 cups all-purpose flour
  • 3 Tbsp sugar
  • 1 Tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 2½ cups buttermilk
  • 2 large eggs, lightly beaten
  • 1 (8-oz) bottle pancake syrup

Instructions

  1. Cook oatmeal according to package directions; set aside.
  2. Stir together flour, sugar, baking powder, baking soda, salt, and cinnamon in a medium bowl.
  3. Stir together buttermilk, cooked oatmeal, and eggs; add to flour mixture, stirring to blend.
  4. Spray a griddle with cooking spray; preheat to medium heat. Drop ¼ cup batter for each pancake onto hot griddle.
  5. Cook 2 to 3 minutes or until tops are covered with bubbles; turn and cook other side. Serve with syrup.

Side Dish Ingredients

  • ¼ cup packed brown sugar
  • 1 (16-oz) pkg bacon
  • 1 lb seedless red grapes

Side Dish Instructions

  1. Preheat oven to 350°F. Place brown sugar in a shallow dish; dredge bacon in sugar, shaking off excess.
  2. Arrange bacon in a single layer on a wire rack on a foil-lined rimmed baking sheet. Bake 15 to 20 minutes or until bacon is crisp.
  3. Serve bacon and grapes on each plate.
