Buffalo-Style Chicken Burgers

Ingredients

  • ½ lb ground chicken
  • 3 Tbsp fresh breadcrumbs (preferably whole wheat; see Note)
  • 1½ Tbsp finely chopped organic celery
  • 2 tsp hot sauce
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • 1 oz crumbled blue cheese
  • 2 Tbsp olive-oil mayonnaise
  • 2 hamburger buns (preferably whole wheat)
  • 2 Boston lettuce leaves

Instructions

  1. Combine chicken, breadcrumbs, celery, hot sauce, and pepper in a medium bowl. Shape into 2 patties.
  2. Cook patties in hot oil in a nonstick skillet over medium heat 5 to 7 minutes per side or until done.
  3. Stir together blue cheese and mayonnaise. Serve burgers on buns with mayonnaise mixture and lettuce.

Side Dish Ingredients

  • ½ lb carrots
  • 1 Tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 400°F. Cut carrots into sticks; toss with oil, garlic powder, pepper, and salt on a greased rimmed baking sheet.
  2. Bake 20 to 25 minutes, turning occasionally, until carrots are tender.
