Buffalo-Style Chicken Burgers
Carrot "Fries"
Ingredients
- ½ lb ground chicken
- 3 Tbsp fresh breadcrumbs (preferably whole wheat; see Note)
- 1½ Tbsp finely chopped organic celery
- 2 tsp hot sauce
- ⅛ tsp pepper
- 1 Tbsp olive oil
- 1 oz crumbled blue cheese
- 2 Tbsp olive-oil mayonnaise
- 2 hamburger buns (preferably whole wheat)
- 2 Boston lettuce leaves
Instructions
- Combine chicken, breadcrumbs, celery, hot sauce, and pepper in a medium bowl. Shape into 2 patties.
- Cook patties in hot oil in a nonstick skillet over medium heat 5 to 7 minutes per side or until done.
- Stir together blue cheese and mayonnaise. Serve burgers on buns with mayonnaise mixture and lettuce.
Side Dish Ingredients
- ½ lb carrots
- 1 Tbsp olive oil
- ½ tsp garlic powder
- ¼ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 400°F. Cut carrots into sticks; toss with oil, garlic powder, pepper, and salt on a greased rimmed baking sheet.
- Bake 20 to 25 minutes, turning occasionally, until carrots are tender.
