Basil-Avocado "Bacon" Sandwiches
Strawberry-Almond Butter SmoothiesIngredients
- 18 slices plant-based bacon
- 12 slices organic whole-grain bread (toasted, if desired)
- ½ cup vegan mayonnaise
- 2 avocados, sliced
- 2 tomatoes, sliced
- 1½ cups baby arugula
- ¼ cup fresh basil leaves
Instructions
- Cook bacon according to package directions.
- Spread one side of each bread slice with mayonnaise; top 6 bread slices with bacon, avocado, tomatoes, arugula, and basil. Top with remaining bread slices, mayonnaise side down.

- 4 cups frozen strawberries
- 1½ cups unsweetened almond milk
- 1 cup vegan plain nut-based yogurt
- ¼ cup almond butter
- 2 Tbsp agave nectar
- ½ tsp pure vanilla extract
Side Dish Instructions
- Process all ingredients in 2 batches in a blender until smooth. Pour into cups to serve.
