Basil-Avocado "Bacon" Sandwiches

Ingredients

  • 18 slices plant-based bacon
  • 12 slices organic whole-grain bread (toasted, if desired)
  • ½ cup vegan mayonnaise
  • 2 avocados, sliced
  • 2 tomatoes, sliced
  • 1½ cups baby arugula
  • ¼ cup fresh basil leaves

Instructions

  1. Cook bacon according to package directions.
  2. Spread one side of each bread slice with mayonnaise; top 6 bread slices with bacon, avocado, tomatoes, arugula, and basil. Top with remaining bread slices, mayonnaise side down.

Side Dish Ingredients

  • 4 cups frozen strawberries
  • 1½ cups unsweetened almond milk
  • 1 cup vegan plain nut-based yogurt
  • ¼ cup almond butter
  • 2 Tbsp agave nectar
  • ½ tsp pure vanilla extract

Side Dish Instructions

  1. Process all ingredients in 2 batches in a blender until smooth. Pour into cups to serve.
