Buffalo Chicken Breasts

Spinach, Apple, and Celery Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ¼ cup mayonnaise
  • ¼ cup buffalo wing sauce
  • ½ cup panko breadcrumbs
  • 2 Tbsp butter, melted
  • ½ (4-oz) pkg crumbled blue cheese (optional)

Instructions

  1. Preheat oven to 425°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Stir together mayonnaise and wing sauce in a shallow bowl. Stir together panko and melted butter in a separate shallow bowl. Dip chicken in mayonnaise mixture; dredge in panko, pressing gently to adhere. Place on a parchment paper-lined rimmed baking sheet.
  3. Bake 25 minutes or until done. Sprinkle with cheese, if desired.

  • 2 Tbsp olive oil
  • 2 tsp honey
  • 1 (5-oz) pkg spinach
  • 1 stalk celery, sliced diagonally
  • 1 small red apple, thinly sliced

Side Dish Instructions

  1. Whisk together lemon juice, oil, and honey in a large bowl. Add spinach, celery, and apple; toss. Season with salt and pepper to taste.
