Barbecue Cornbread Bake

Ingredients

  • ¾ lb ground beef
  • ½ cup chopped onion
  • ¾ cup barbecue sauce
  • 1 (15-oz) can pinto beans, drained and rinsed
  • 1 (8-oz) pkg corn muffin mix
  • 1 cup shredded Cheddar cheese
  • ¼ cup sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 350°F. Cook beef and onion in a skillet until beef is browned and crumbly; drain, return to skillet, and stir in barbecue sauce. Season with salt and pepper to taste. Stir in beans.
  2. Prepare muffin mix according to package directions. Spoon batter into a lightly greased 9-inch baking dish. Bake 10 minutes.
  3. Top with beef mixture, and bake 10 minutes longer. Top with cheese; bake 5 minutes longer or until cornbread is done and cheese is melted.
  4. Top with sour cream and green onions.

  • 4 Tbsp butter, melted
  • ¼ cup packed brown sugar
  • ½ tsp garlic powder
  • 2 (14.5-oz) cans cut green beans, drained
  • 4 slices bacon, chopped

Side Dish Instructions

  1. Preheat oven to at 350°F. Toss together melted butter, brown sugar, garlic powder, and green beans in a 9-inch baking dish. Sprinkle with bacon.
  2. Bake 25 minutes or until hot and bubbly.
