Barbecue Cornbread Bake
Sweet Green BeansIngredients
- ¾ lb ground beef
- ½ cup chopped onion
- ¾ cup barbecue sauce
- 1 (15-oz) can pinto beans, drained and rinsed
- 1 (8-oz) pkg corn muffin mix
- 1 cup shredded Cheddar cheese
- ¼ cup sour cream
- 2 green onions, sliced
Instructions
- Preheat oven to 350°F. Cook beef and onion in a skillet until beef is browned and crumbly; drain, return to skillet, and stir in barbecue sauce. Season with salt and pepper to taste. Stir in beans.
- Prepare muffin mix according to package directions. Spoon batter into a lightly greased 9-inch baking dish. Bake 10 minutes.
- Top with beef mixture, and bake 10 minutes longer. Top with cheese; bake 5 minutes longer or until cornbread is done and cheese is melted.
- Top with sour cream and green onions.

- 4 Tbsp butter, melted
- ¼ cup packed brown sugar
- ½ tsp garlic powder
- 2 (14.5-oz) cans cut green beans, drained
- 4 slices bacon, chopped
Side Dish Instructions
- Preheat oven to at 350°F. Toss together melted butter, brown sugar, garlic powder, and green beans in a 9-inch baking dish. Sprinkle with bacon.
- Bake 25 minutes or until hot and bubbly.
