Upside-Down Chicken Shepherd's Pie

Ingredients

  • 1½ lb ground chicken
  • 1 onion, chopped
  • 1 (12-oz) pkg broccoli florets
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (14.5-oz) can low-sodium beef broth
  • 1 (6-oz) can tomato paste
  • 1 Tbsp Worcestershire sauce
  • 2 tsp Italian seasoning
  • ½ tsp salt

Instructions

  1. Cook chicken and onion in a large skillet over medium-high heat 8 minutes or until browned; drain.
  2. Transfer to a 5- to 7-quart slow cooker. Stir in broccoli, mushrooms, broth, tomato paste, Worcestershire sauce, Italian seasoning, and salt.
  3. Cover and cook on LOW 8 hours or until vegetables are tender. Serve over Garlic Mashed Sweet Potatoes recipe.

  • 2 lb sweet potatoes, peeled and diced
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Place potatoes in a microwave-safe bowl; microwave at HIGH 15 minutes or until tender.
  2. Cook garlic in hot oil in a saucepan over medium heat 2 minutes or until fragrant.
  3. Add garlic, salt, and pepper to sweet potatoes, and mash to desired consistency.
