Cheesy Barbecue-Bacon Nachos

Ingredients

  • 1 (11-oz) pkg tortilla chips
  • Reserved cooked chopped pork (from Smoked Paprika Pork Roast recipe)
  • 1 (2.1-oz) pkg fully cooked bacon, chopped
  • 1 (8-oz) pkg shredded sharp Cheddar cheese
  • 1½ cups barbecue sauce
  • ¾ cup sliced dill pickles
  • 1 (16-oz) pkg tricolor coleslaw mix
  • ½ cup mayonnaise
  • 1 Tbsp lemon juice
  • 1 tsp honey
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Arrange chips on a greased baking sheet; top with pork, bacon, and cheese. Bake 5 minutes or until cheese melts.
  2. Drizzle with barbecue sauce, and top with dill pickles.
  3. Stir together coleslaw mix, mayonnaise, lemon juice, honey, and pepper. Spoon over nachos.
