Cheesy Barbecue-Bacon Nachos
Ingredients
- 1 (11-oz) pkg tortilla chips
- Reserved cooked chopped pork (from Smoked Paprika Pork Roast recipe)
- 1 (2.1-oz) pkg fully cooked bacon, chopped
- 1 (8-oz) pkg shredded sharp Cheddar cheese
- 1½ cups barbecue sauce
- ¾ cup sliced dill pickles
- 1 (16-oz) pkg tricolor coleslaw mix
- ½ cup mayonnaise
- 1 Tbsp lemon juice
- 1 tsp honey
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Arrange chips on a greased baking sheet; top with pork, bacon, and cheese. Bake 5 minutes or until cheese melts.
- Drizzle with barbecue sauce, and top with dill pickles.
- Stir together coleslaw mix, mayonnaise, lemon juice, honey, and pepper. Spoon over nachos.
