Brisket with Carrots and Onions
Steamed Italian Broccoli RabeIngredients
- 3 lb beef brisket, trimmed
- 2 sweet onions, thinly sliced
- 6 carrots, cut into 1-inch pieces
- 1 (8-oz) pkg sliced mushrooms
- 6 cloves garlic, sliced
- 3 cups low-sodium beef broth
- 10 sprigs fresh thyme
- 2 bay leaves
- 1 tsp pepper
- ½ tsp salt
Instructions
- Place brisket in a 5- to 7-quart slow cooker. Top with onions, carrots, mushrooms, and garlic.
- Pour broth over vegetables; top with thyme, bay leaves, pepper.
- Cover and cook on LOW 10 to 12 hours or until brisket is tender; discard bay leaves.
- Slice brisket (reserve half for Brisket Lettuce Wraps with Cilantro Slaw recipe). Serve remaining brisket and vegetables with Steamed Italian Broccoli Rabe recipe.
Side Dish Ingredients
- 1½ lb broccoli rabe, trimmed and cut into 2-inch pieces (or use broccoli florets)
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp Italian seasoning
- ½ tsp garlic salt
- ½ tsp pepper
Side Dish Instructions
- Place broccoli rabe in a steamer basket over boiling water. Cover and steam 4 minutes or until tender.
- Transfer to a large bowl; add oil, lemon juice, Italian seasoning, garlic salt, and pepper. Toss to coat.
