Brisket with Carrots and Onions

Ingredients

  • 3 lb beef brisket, trimmed
  • 2 sweet onions, thinly sliced
  • 6 carrots, cut into 1-inch pieces
  • 1 (8-oz) pkg sliced mushrooms
  • 6 cloves garlic, sliced
  • 3 cups low-sodium beef broth
  • 10 sprigs fresh thyme
  • 2 bay leaves
  • 1 tsp pepper
  • ½ tsp salt

Instructions

  1. Place brisket in a 5- to 7-quart slow cooker. Top with onions, carrots, mushrooms, and garlic.
  2. Pour broth over vegetables; top with thyme, bay leaves, pepper.
  3. Cover and cook on LOW 10 to 12 hours or until brisket is tender; discard bay leaves.
  4. Slice brisket (reserve half for Brisket Lettuce Wraps with Cilantro Slaw recipe). Serve remaining brisket and vegetables with Steamed Italian Broccoli Rabe recipe.

Side Dish Ingredients

  • 1½ lb broccoli rabe, trimmed and cut into 2-inch pieces (or use broccoli florets)
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp Italian seasoning
  • ½ tsp garlic salt
  • ½ tsp pepper

Side Dish Instructions

  1. Place broccoli rabe in a steamer basket over boiling water. Cover and steam 4 minutes or until tender.
  2. Transfer to a large bowl; add oil, lemon juice, Italian seasoning, garlic salt, and pepper. Toss to coat.
