Lemon Chicken-Broccoli Casserole
Ingredients
- 1 (14-oz) pkg frozen broccoli florets
- 2 cups chopped rotisserie chicken
- 1 lemon
- ½ (10.5-oz) can cream of chicken soup
- ½ cup sour cream
- 1½ Tbsp water
- ¾ tsp curry powder
- ¾ cup shredded Cheddar cheese
- ¼ cup almond flour
- ¼ tsp garlic salt
- ½ Tbsp olive oil
Instructions
- Preheat oven to 350°F. Steam broccoli according to package directions.
- Spread broccoli in a greased 8-inch pan. Top with chicken.
- Grate zest of lemon to measure 1 tsp, and squeeze juice to measure 1½ Tbsp.
- Whisk together soup, sour cream, lemon juice, water, and curry powder; spread over chicken. Sprinkle with cheese.
- Stir together almond flour, garlic salt, oil, and lemon zest; sprinkle over casserole.
- Bake, uncovered, 25 minutes or until lightly browned.
