Chicken and Vegetable Pasta

Ingredients

  • 12 oz whole wheat rotini pasta
  • 1 (12-oz) pkg frozen peas and carrots
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cups shredded rotisserie chicken
  • ½ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Cook pasta and peas and carrots according to package directions.
  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Stir in pasta, peas, carrots, garlic powder, salt, and pepper.
  3. Add chicken, broth, and cream; cook 4 minutes or until mixture is thickened. Sprinkle with parsley, if desired.
