Chicken and Vegetable Pasta
Ingredients
- 12 oz whole wheat rotini pasta
- 1 (12-oz) pkg frozen peas and carrots
- 1 onion, chopped
- 2 Tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 3 cups shredded rotisserie chicken
- ½ cup low-sodium chicken broth
- ½ cup heavy cream
- ¼ cup chopped fresh parsley (optional)
Instructions
- Cook pasta and peas and carrots according to package directions.
- Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Stir in pasta, peas, carrots, garlic powder, salt, and pepper.
- Add chicken, broth, and cream; cook 4 minutes or until mixture is thickened. Sprinkle with parsley, if desired.
