Crispy Fish Rice Bowls
Ingredients
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 12 frozen beer-battered fish fillets
- ¾ cup plain Greek yogurt
- ½ cup chopped fresh cilantro
- ¼ cup lime juice
- ½ tsp salt
- 1 (16-oz) pkg broccoli slaw
- 3 green onions, sliced
- 2 avocados, chopped
Instructions
- Cook rice and fish according to package directions. Flake or chop fish, if desired.
- Meanwhile, stir together yogurt, cilantro, lime juice, and salt in a large bowl. Add slaw and onions; toss.
- Divide rice, fish, slaw mixture, and avocado among 6 bowls.
