Crispy Fish Rice Bowls

Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 12 frozen beer-battered fish fillets
  • ¾ cup plain Greek yogurt
  • ½ cup chopped fresh cilantro
  • ¼ cup lime juice
  • ½ tsp salt
  • 1 (16-oz) pkg broccoli slaw
  • 3 green onions, sliced
  • 2 avocados, chopped

Instructions

  1. Cook rice and fish according to package directions. Flake or chop fish, if desired.
  2. Meanwhile, stir together yogurt, cilantro, lime juice, and salt in a large bowl. Add slaw and onions; toss.
  3. Divide rice, fish, slaw mixture, and avocado among 6 bowls.
