Avocado and Smoked Salmon Frittata

Ingredients

  • 1½ Tbsp olive oil
  • 8 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (5-oz) pkg baby arugula
  • 1 avocado, diced
  • 4 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 (4-oz) pkg sliced smoked salmon, chopped

Instructions

  1. Preheat broiler. Heat olive oil in an ovenproof skillet over medium heat.
  2. Whisk together eggs, salt, and pepper. Add eggs to hot skillet; stir quickly with a spatula. Cook, without stirring, until eggs begin to set.
  3. Transfer skillet to oven; broil 3 to 4 minutes or until top is golden and eggs are firm.
  4. Combine arugula, avocado, extra virgin olive oil, and lemon juice; toss.
  5. Sprinkle salmon over frittata; top with arugula just before serving.
