Avocado and Smoked Salmon Frittata

Ingredients
- 1½ Tbsp olive oil
- 8 large eggs
- ½ tsp salt
- ½ tsp pepper
- 1 (5-oz) pkg baby arugula
- 1 avocado, diced
- 4 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 1 (4-oz) pkg sliced smoked salmon, chopped
Instructions
- Preheat broiler. Heat olive oil in an ovenproof skillet over medium heat.
- Whisk together eggs, salt, and pepper. Add eggs to hot skillet; stir quickly with a spatula. Cook, without stirring, until eggs begin to set.
- Transfer skillet to oven; broil 3 to 4 minutes or until top is golden and eggs are firm.
- Combine arugula, avocado, extra virgin olive oil, and lemon juice; toss.
- Sprinkle salmon over frittata; top with arugula just before serving.
