Individual Oven-Baked Ham-and-Cheese Eggs

Ingredients

  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ¼ cup olive oil, divided
  • 8 large eggs
  • 6 oz thick deli-sliced low-sodium ham, chopped
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 375°F. Cook bell pepper, onion, and garlic in 3 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until tender.
  2. Meanwhile, grease 8 cups in a standard muffin pan with 1 Tbsp oil; fill remaining 4 empty cups half full with water.
  3. Whisk together eggs, ham, bell pepper mixture, garlic salt, and pepper. Pour egg mixture into greased muffin cups; top with cheese.
  4. Bake 15 to 18 minutes or until eggs are set.
