Individual Oven-Baked Ham-and-Cheese Eggs

Ingredients
- 1 green bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- ¼ cup olive oil, divided
- 8 large eggs
- 6 oz thick deli-sliced low-sodium ham, chopped
- ¼ tsp garlic salt
- ¼ tsp pepper
- ½ cup shredded Cheddar cheese
Instructions
- Preheat oven to 375°F. Cook bell pepper, onion, and garlic in 3 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until tender.
- Meanwhile, grease 8 cups in a standard muffin pan with 1 Tbsp oil; fill remaining 4 empty cups half full with water.
- Whisk together eggs, ham, bell pepper mixture, garlic salt, and pepper. Pour egg mixture into greased muffin cups; top with cheese.
- Bake 15 to 18 minutes or until eggs are set.
