Marinara Eggs with Mozzarella

Ingredients
- 1 clove garlic, minced
- 3 Tbsp olive oil
- 1½ cups fire-roasted petite diced tomatoes
- ½ tsp Italian seasoning
- ¼ cup chicken broth
- 8 large eggs
- 1 cup shredded mozzarella cheese
- ¼ cup chopped fresh basil
Instructions
- Cook garlic in hot oil in a large nonstick skillet over medium-high heat 30 seconds or until fragrant.
- Add tomatoes and Italian seasoning; simmer 5 minutes or until slightly thickened. Add broth; bring to a boil. Reduce heat to medium; simmer 5 minutes.
- Make 8 indentations in tomato mixture with the back of a spoon.
- Crack 1 egg into each indentation. Cover and cook 4 to 5 minutes or until whites are set and yolks are cooked to desired doneness. Sprinkle with cheese and basil.
