Marinara Eggs with Mozzarella

Ingredients

  • 1 clove garlic, minced
  • 3 Tbsp olive oil
  • 1½ cups fire-roasted petite diced tomatoes
  • ½ tsp Italian seasoning
  • ¼ cup chicken broth
  • 8 large eggs
  • 1 cup shredded mozzarella cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Cook garlic in hot oil in a large nonstick skillet over medium-high heat 30 seconds or until fragrant.
  2. Add tomatoes and Italian seasoning; simmer 5 minutes or until slightly thickened. Add broth; bring to a boil. Reduce heat to medium; simmer 5 minutes.
  3. Make 8 indentations in tomato mixture with the back of a spoon.
  4. Crack 1 egg into each indentation. Cover and cook 4 to 5 minutes or until whites are set and yolks are cooked to desired doneness. Sprinkle with cheese and basil.
