Cheesy Sausage and Spinach Crustless Quiche

Ingredients

  • ½ (20-oz) pkg ground Italian sausage, casings removed
  • 3 Tbsp olive oil
  • 1 (5-oz) pkg baby spinach
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 1 Tbsp Dijon mustard
  • ½ tsp pepper
  • ¼ tsp garlic salt

Instructions

  1. Preheat oven to 375°F. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly. Add spinach; cook 1 to 2 minutes or until wilted. Remove from heat.
  2. Spread sausage mixture in bottom of a greased 9-inch pie plate; sprinkle with cheese. Place pie plate on a rimmed baking sheet.
  3. Whisk together eggs, mustard, pepper, and garlic salt. Pour over sausage mixture.
  4. Bake 20 to 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.
