Bistro Chicken Salad
Ingredients
- ¼ cup chopped pecans
- 1½ cups shredded rotisserie chicken
- ⅓ cup mayonnaise
- 1½ Tbsp Dijon mustard, divided
- 2 tsp lemon juice
- 1 tsp dried tarragon (or use 1 Tbsp chopped fresh tarragon)
- ¼ tsp pepper
- 1 (10-oz) pkg mixed greens
- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
Instructions
- Toast nuts in a dry skillet over medium heat 4 to 5 minutes or until fragrant.
- Combine nuts, chicken, mayonnaise, ½ Tbsp mustard, lemon juice, tarragon, and pepper in a bowl.
- Divide greens among 4 plates.
- Whisk together 1 Tbsp mustard, oil, and vinegar. Drizzle over greens; top each serving with chicken salad.
