Korean Stir Fry
Sesame Broccoli RiceIngredients
- ½ lb plant-based ground beef
- 2 small cloves garlic, minced
- 2 tsp rice wine vinegar
- 2 tsp honey
- ½ Tbsp low-sodium soy sauce
- ⅛ tsp ground ginger
- ⅛ tsp crushed red pepper
- ½ small cucumber, thinly sliced
- 1 carrot, shredded
- 1 green onion, chopped
- Sesame seeds (optional)
Instructions
- Cook plant-based beef and garlic in a large nonstick skillet 8 minutes.
- Combine vinegar, honey, soy sauce, ginger, and pepper; add to skillet. Cook 2 minutes or until thoroughly heated.
- Serve beef mixture over Sesame Broccoli Rice recipe; top with cucumber, carrot, and green onion; sprinkle with sesame seeds, if desired.
Side Dish Ingredients
- 1 (10-oz) pkg frozen riced broccoli
- 1½ tsp dark sesame oil
- Dash of salt
Side Dish Instructions
- Cook broccoli according to package directions; toss with oil and salt.
