Korean Stir Fry

Sesame Broccoli Rice

Ingredients

  • ½ lb plant-based ground beef 
  • 2 small cloves garlic, minced
  • 2 tsp rice wine vinegar
  • 2 tsp honey
  • ½ Tbsp low-sodium soy sauce
  • ⅛ tsp ground ginger
  • ⅛ tsp crushed red pepper
  • ½ small cucumber, thinly sliced
  • 1 carrot, shredded
  • 1 green onion, chopped
  • Sesame seeds (optional)

Instructions

  1. Cook plant-based beef and garlic in a large nonstick skillet 8 minutes.
  2. Combine vinegar, honey, soy sauce, ginger, and pepper; add to skillet. Cook 2 minutes or until thoroughly heated.
  3. Serve beef mixture over Sesame Broccoli Rice recipe; top with cucumber, carrot, and green onion; sprinkle with sesame seeds, if desired.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced broccoli
  • 1½ tsp dark sesame oil
  • Dash of salt

Side Dish Instructions

  1.  Cook broccoli according to package directions; toss with oil and salt.
