Braised Pork with Red Cabbage

Ingredients

  • 1 small head red cabbage, thinly sliced
  • 1 lb boneless pork loin roast
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup low-sodium chicken broth
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp brown sugar

Instructions

  1. Place cabbage in a greased 3- to 4-quart slow cooker.
  2. Brush pork with oil; sprinkle with salt and pepper, and place on top of cabbage.
  3. Stir together broth, vinegar, and brown sugar; pour over pork.
  4. Cover and cook on LOW 8 to 10 hours or until pork is tender. Slice pork to serve.

Side Dish Ingredients

  • ½ (10-oz) pkg chopped romaine lettuce
  • ½ (5-oz) pkg seasoned croutons
  • 6 Tbsp Italian dressing

Side Dish Instructions

  1. Combine lettuce, croutons and dressing in a large bowl.
