Braised Pork with Red Cabbage
Romaine SaladIngredients
- 1 small head red cabbage, thinly sliced
- 1 lb boneless pork loin roast
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup low-sodium chicken broth
- 2 Tbsp apple cider vinegar
- 1 Tbsp brown sugar
Instructions
- Place cabbage in a greased 3- to 4-quart slow cooker.
- Brush pork with oil; sprinkle with salt and pepper, and place on top of cabbage.
- Stir together broth, vinegar, and brown sugar; pour over pork.
- Cover and cook on LOW 8 to 10 hours or until pork is tender. Slice pork to serve.
Side Dish Ingredients
- ½ (10-oz) pkg chopped romaine lettuce
- ½ (5-oz) pkg seasoned croutons
- 6 Tbsp Italian dressing
Side Dish Instructions
- Combine lettuce, croutons and dressing in a large bowl.
