Roast Beef Lettuce Wraps with Pesto Mayo

Ingredients

  • ¼ cup reduced-fat olive oil mayonnaise
  • ¼ cup refrigerated reduced-fat pesto
  • 8 leaves Bibb lettuce
  • ½ lb thin deli-sliced, low-sodium roast beef
  • 1 avocado, sliced
  • 1 tomato, chopped

Instructions

  1. Stir together mayonnaise and pesto. Spread mayonnaise mixture on each lettuce leaf. Top with roast beef, avocado, and tomato; roll up.

Side Dish Ingredients

  • 2 cups cubed honeydew melon
  • 2 small bananas, cut into 1-inch pieces
  • ½ (16-oz) container strawberries, cut in half
  • 1 (5.3-oz) container less-sugar vanilla Greek yogurt (see Note)

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
