Turkey Pitas with Sun-Dried Tomato Pesto

Ingredients

  • ¼ cup sun-dried tomato pesto (or regular pesto)
  • 2 Tbsp reduced-fat mayonnaise
  • 2 whole wheat pita bread rounds, cut in half
  • ½ lb thin deli-sliced oven-roasted turkey breast
  • 4 (0.7-oz) slices part-skim mozzarella cheese
  • ⅓ cup thinly sliced red onion
  • 1 tomato, thinly sliced
  • 1 cup baby arugula

Instructions

  1. Stir together pesto and mayonnaise in a small bowl.
  2. Spread pesto mixture inside pita halves. Fill pitas with turkey, cheese, onion, tomato, and arugula.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, halved
  • 2 cups cubed honeydew
  • ¼ cup chopped fresh basil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Gently toss together all ingredients in a large bowl. Chill until ready to serve.
