Turkey Pitas with Sun-Dried Tomato Pesto
Strawberries and Melon with Fresh Basil
Ingredients
- ¼ cup sun-dried tomato pesto (or regular pesto)
- 2 Tbsp reduced-fat mayonnaise
- 2 whole wheat pita bread rounds, cut in half
- ½ lb thin deli-sliced oven-roasted turkey breast
- 4 (0.7-oz) slices part-skim mozzarella cheese
- ⅓ cup thinly sliced red onion
- 1 tomato, thinly sliced
- 1 cup baby arugula
Instructions
- Stir together pesto and mayonnaise in a small bowl.
- Spread pesto mixture inside pita halves. Fill pitas with turkey, cheese, onion, tomato, and arugula.
Side Dish Ingredients
- 1 (16-oz) pkg strawberries, halved
- 2 cups cubed honeydew
- ¼ cup chopped fresh basil
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Gently toss together all ingredients in a large bowl. Chill until ready to serve.
