Cinnamon-Raisin French Toast Waffles

Ingredients

  • ¼ cup 1% low-fat milk
  • 1 tsp vanilla extract
  • 4 large eggs, lightly beaten
  • 4 (1.2-oz) slices whole-grain cinnamon-raisin bread
  • ¼ cup chopped pecans
  • ⅓ cup pure maple syrup

Instructions

  1. Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with cooking spray.
  2. Whisk together milk, vanilla and eggs in a shallow dish. Working in batches, dip bread in egg mixture, soaking 30 seconds on each side.
  3. Place 1 soaked bread slice on waffle iron; close, and cook 3 to 5 minutes or until done and edges are crisp. Repeat procedure with remaing bread slices. Serve topped with nuts and syrup.
