Zucchini and Tomato Frittata

Ingredients

  • 4 tsp olive oil, divided
  • 1 zucchini, thinly sliced
  • 1 pint grape tomatoes, halved
  • 8 large eggs, lightly beaten
  • ¼ cup chopped green onions
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Grease a 9-inch baking dish with 1 tsp oil.
  2. Cook zucchini and tomatoes in 1 Tbsp hot oil in a large nonstick skillet over medium heat 4 minutes or until tender. Spread in baking dish.
  3. Whisk together eggs, green onions, Italian seasoning, garlic, salt, and pepper in a bowl; pour over zucchini mixture.
  4. Bake 20 to 25 minutes or until center is set. Cut into squares before serving.
