Zucchini and Tomato Frittata
Turkey Sausage Links
Ingredients
- 4 tsp olive oil, divided
- 1 zucchini, thinly sliced
- 1 pint grape tomatoes, halved
- 8 large eggs, lightly beaten
- ¼ cup chopped green onions
- 1 tsp Italian seasoning
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Grease a 9-inch baking dish with 1 tsp oil.
- Cook zucchini and tomatoes in 1 Tbsp hot oil in a large nonstick skillet over medium heat 4 minutes or until tender. Spread in baking dish.
- Whisk together eggs, green onions, Italian seasoning, garlic, salt, and pepper in a bowl; pour over zucchini mixture.
- Bake 20 to 25 minutes or until center is set. Cut into squares before serving.
