Turkey Sausage-and-Cheddar Cheese Breakfast Burritos

Ingredients

  • ½ lb lean ground turkey sausage
  • 2 large eggs
  • 2 large egg whites
  • 4 (0.67-oz) slices reduced-fat Cheddar cheese
  • 4 soft taco-size whole wheat tortillas
  • ½ cup refrigerated salsa
  • 2 Tbsp chopped green onion

Instructions

  1. Cook sausage in a large nonstick skillet over medium heat 6 minutes or until browned and crumbled. Drain on paper towels, reserving 1 Tbsp drippings in pan.
  2. Whisk together eggs and egg whites. Cook in hot drippings over medium heat, without stirring, 2 minutes or until beginning to set. Cook, stirring constantly, 2 minutes or until thickened and set.
  3. Place 1 slice cheese in center of each tortilla. Top with sausage, eggs, salsa, and green onion. Roll up tortillas, tucking in ends. Cut in half before serving.
