Easy Ham and Broccoli Pot Pie

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1 (15-oz) can corn, well drained
  • 1 (16-oz) pkg cooked cubed ham, drained
  • 1 (10.75-oz) can cream of chicken soup
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) pkg shredded Cheddar-Jack cheese
  • 1 (7-oz) pouch biscuit mix

Instructions

  1. Preheat oven to 375ºF. Steam broccoli according to package directions; chop into small pieces and place in a large bowl.
  2. Stir in corn, ham, soup, sour cream, and cheese; spoon into a lightly greased 11x7-inch baking dish.
  3. Prepare biscuit mix according to package directions for drop biscuits. Spoon biscuits by tablespoonfuls over filling in dish.
  4. Bake 25 to 30 minutes or until biscuits are done and filling is hot and bubbly.

Side Dish Ingredients

  • 6 carrots
  • 1 cup French onion dip
  • 3 crisp red apples, cored and sliced

Side Dish Instructions

  1. Peel carrots, and cut into 2-inch sticks; serve with dip.
  2. Serve apples on the side.
