Bolognese Tortellini Bake
Lemon-Basil Asparagus
Ingredients
- 1 (19-oz) pkg frozen tortellini
- 1½ lb ground beef
- ½ cup chopped onion
- 3 cloves garlic, minced
- ½ cup red wine
- 2 Tbsp tomato paste
- 1 (28-oz) can crushed tomatoes
- 1 tsp Italian seasoning
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Preheat oven to 350°F. Place frozen tortellini in a greased 13-x 9-inch baking dish. Thaw slightly while beef mixture cooks.
- Cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Add wine and tomato paste; cook, stirring constantly, 2 minutes. Stir in tomatoes and Italian seasoning; simmer 10 minutes.
- Add sauce to tortellini; stir until pasta is coated. Cover and bake 30 minutes or until pasta is tender. Uncover, sprinkle with cheese, and bake 10 minutes longer.

- 1½ lb asparagus, trimmed
- 2 Tbsp butter
- 2 Tbsp lemon juice
- 2 Tbsp chopped fresh basil
Side Dish Instructions
- Bring asparagus and ½-inch water to a boil in a large skillet over medium-high heat; cover and steam 3 minutes. Drain and add butter, lemon juice, and basil; toss.
- Season with salt and pepper to taste.
