Chicken Waldorf Salad Wraps

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ⅔ cup mayonnaise
  • ½ cup sour cream
  • 1 Tbsp lemon juice
  • 1 Tbsp honey
  • 2 apples, cored and chopped
  • ½ cup thinly sliced celery
  • 1 (2-oz) pkg chopped pecans
  • 6 leaves green leaf lettuce
  • 6 burrito-size flour tortillas

Instructions

  1. Cook chicken in boiling water to cover in a saucepan 20 minutes or until done; drain, cool, and shred chicken.
  2. Whisk together mayonnaise, sour cream, lemon juice, and honey in a large bowl. Add chicken, apples, celery, and nuts. Serve chicken salad and lettuce leaves in flour tortillas.

Side Dish Ingredients

  • 1 seedless watermelon, cut into wedges
  • 2 Tbsp honey
  • ½ tsp kosher salt
  • 1 (8-oz) pkg potato chips

Side Dish Instructions

  1. Place watermelon on a platter; drizzle with honey, and sprinkle with salt.
  2. Serve with chips.
