Grilled Greek Burgers with Feta Dip

Ingredients

  • 1½ lb ground beef
  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 1 cup panko breadcrumbs
  • 2 large eggs, lightly beaten
  • 1 Tbsp Greek seasoning
  • 1 (6-oz) pkg crumbled feta cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tsp dried dill
  • 1 lemon

Instructions

  1. Preheat grill or grill pan to medium-high heat. Stir together beef, spinach, panko, eggs, and Greek seasoning. Shape mixture into 6 patties.
  2. Grill patties, covered, 5 to 6 minutes per side or until no longer pink in centers.
  3. Meanwhile, stir together cheese, mayonnaise, sour cream, and dill in a bowl. Grate zest and squeeze juice from lemon into cheese mixture; stir well. Season with salt and pepper to taste. Serve Feta Dip with patties.

Side Dish Ingredients

  • 2 lb asparagus, trimmed
  • 2 Tbsp olive oil
  • ½ cup grated Parmesan cheese
  • 3 tomatoes, sliced

Side Dish Instructions

  1. Preheat oven to 400°F. Toss asparagus with oil on a large lightly greased rimmed baking sheet; bake 15 minutes or until crisp-tender. Season lightly with salt and pepper; sprinkle with cheese.
  2. Serve asparagus and sliced tomatoes with burgers.
