Miso-Ginger Salmon
Orange-Cashew VegetablesIngredients
- 6 (6-oz) salmon fillets
- 2 Tbsp miso
- 2 Tbsp grated ginger (or use garlic)
- 2 Tbsp maple syrup
- 1 Tbsp low-sodium soy sauce
Instructions
- Preheat oven to 450°F. Place fish on a large greased baking sheet.
- Combine miso, ginger, maple syrup, and soy sauce in a bowl. Brush miso mixture on fish.
- Bake 12 to 15 minutes or until fish flakes.
Side Dish Ingredients
- 1 (20-oz) pkg frozen broccoli stir-fry medley
- 2 Tbsp olive oil (or use sesame oil)
- ¾ cup orange sauce
- ½ cup cashew pieces
Side Dish Instructions
- Cook vegetables in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender.
- Stir in orange sauce; cook 3 minutes or until thoroughly heated. Sprinkle with nuts.
