Miso-Ginger Salmon

Ingredients

  • 6 (6-oz) salmon fillets
  • 2 Tbsp miso
  • 2 Tbsp grated ginger (or use garlic)
  • 2 Tbsp maple syrup
  • 1 Tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 450°F. Place fish on a large greased baking sheet.
  2. Combine miso, ginger, maple syrup, and soy sauce in a bowl. Brush miso mixture on fish.
  3. Bake 12 to 15 minutes or until fish flakes.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen broccoli stir-fry medley
  • 2 Tbsp olive oil (or use sesame oil)
  • ¾ cup orange sauce
  • ½ cup cashew pieces

Side Dish Instructions

  1. Cook vegetables in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender.
  2. Stir in orange sauce; cook 3 minutes or until thoroughly heated. Sprinkle with nuts.
