Sausage and Mushroom Egg Casserole

Ingredients

  • 1 (16-oz) pkg lean Italian turkey sausage
  • 2 Tbsp olive oil, divided
  • 1 (8-oz) pkg sliced mushrooms
  • 8 large eggs
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook sausage in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until browned and crumbly.
  2. Transfer sausage to a paper-towel lined plate, reserving drippings in skillet.
  3. Add mushrooms to drippings in skillet; cook over medium-high heat 5 minutes or until browned, stirring often.
  4. Whisk together eggs and pepper in a large bowl. Stir in sausage and mushrooms.
  5. Grease an 11- x 7-inch baking dish with 1 Tbsp oil; pour mixture into dish.
  6. Bake 20 to 25 minutes or until center is set.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Whisk together oil, vinegar, and pepper in a bowl. Add tomatoes and basil; toss.
