Sausage and Mushroom Egg Casserole
Tomato-Basil TossIngredients
- 1 (16-oz) pkg lean Italian turkey sausage
- 2 Tbsp olive oil, divided
- 1 (8-oz) pkg sliced mushrooms
- 8 large eggs
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Cook sausage in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until browned and crumbly.
- Transfer sausage to a paper-towel lined plate, reserving drippings in skillet.
- Add mushrooms to drippings in skillet; cook over medium-high heat 5 minutes or until browned, stirring often.
- Whisk together eggs and pepper in a large bowl. Stir in sausage and mushrooms.
- Grease an 11- x 7-inch baking dish with 1 Tbsp oil; pour mixture into dish.
- Bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- ½ tsp pepper
- 1 pint grape tomatoes, halved
- ¼ cup chopped fresh basil
Side Dish Instructions
- Whisk together oil, vinegar, and pepper in a bowl. Add tomatoes and basil; toss.
