Cheesy Sausage and Spinach Crustless Quiche
Fresh Strawberries
Ingredients
- 1 (12-oz) pkg Italian turkey sausage, casings removed
- 1 Tbsp olive oil
- 1 (5-oz) pkg baby spinach
- 1 cup freshly shredded mozzarella cheese
- 8 large eggs
- 1 Tbsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp pepper
Instructions
- Preheat oven to 375°F.
- Cook sausage in hot oil in large skillet over medium heat 5 to 6 minutes or until sausage in no longer pink, stirring to crumble.
- Add spinach; cook 1 to 2 minutes or until wilted. Remove from heat, and cool 5 minutes.
- Spread sausage mixture in bottom of a greased 9-inch pie plate; top with cheese.
- Whisk together eggs, mustard, garlic powder, and pepper. Pour over sausage mixture in pie plate .
- Place pie plate on a rimmed baking sheet. Bake 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.

- Serve alongside quiche.
