Tuna Croquettes with Spicy Remoulade

Ingredients

  • 4 (5-oz) cans wild-caught tuna, drained and flaked
  • 1 large egg, lightly beaten
  • ⅓ cup all-purpose flour
  • ¼ cup chopped green onions
  • ¼ cup mayonnaise, divided
  • 1 Tbsp lemon juice
  • 2½ tsp Dijon mustard, divided
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • 1 Tbsp olive oil
  • 1 tsp capers
  • 4 lemon wedges

Instructions

  1. Combine tuna, egg, flour, green onions, 2 Tbsp mayonnaise, lemon juice, 1½ tsp mustard, garlic powder, and cayenne pepper in a bowl. Shape mixture into 4 large patties (or 8 small patties).
  2. Cook patties in hot oil in a large nonstick skillet over medium heat 4 to 5 minutes per side or until browned and firm.
  3. Combine 2 Tbsp mayonnaise, 1 tsp mustard, and capers. Serve tuna croquettes with remoulade sauce and lemon wedges.

Side Dish Ingredients

  • 4 cups shredded coleslaw
  • 1½ Tbsp olive oil
  • 1½ Tbsp apple cider vinegar
  • ½ tsp honey
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Combine all ingredients in a bowl, tossing to coat. Refrigerate until ready to serve.
