Roast Beef Roll-Ups with Horseradish

Ingredients

  • ⅓ cup mayonnaise
  • 1 Tbsp prepared horseradish
  • 2 tsp lemon juice
  • 1½ lb thinly sliced low-sodium roast beef
  • 2 tomatoes, cut into 8 slices
  • 1 cup baby arugula
  • ¼ cup thinly sliced red onion

Instructions

  1. Combine mayonnaise, horseradish, and lemon juice; set aside.
  2. Stack roast beef slices in 8 piles on a work surface.
  3. Top roast beef with mayonnaise mixture, tomatoes, arugula, and onion. Roll up; secure with toothpicks.

  • 1 Tbsp red wine vinegar
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 English cucumbers
  • 4 carrots, peeled

Side Dish Instructions

  1. Whisk together oil, vinegar, garlic powder, salt, and pepper in a large bowl.
  2. Cut cucumbers and carrots into thin slices. Add to bowl; toss to coat.
