Roast Beef Roll-Ups with Horseradish
Carrot-Cucumber Salad
Ingredients
- ⅓ cup mayonnaise
- 1 Tbsp prepared horseradish
- 2 tsp lemon juice
- 1½ lb thinly sliced low-sodium roast beef
- 2 tomatoes, cut into 8 slices
- 1 cup baby arugula
- ¼ cup thinly sliced red onion
Instructions
- Combine mayonnaise, horseradish, and lemon juice; set aside.
- Stack roast beef slices in 8 piles on a work surface.
- Top roast beef with mayonnaise mixture, tomatoes, arugula, and onion. Roll up; secure with toothpicks.
Side Dish Ingredients
- 2½ Tbsp olive oil
- 1 Tbsp red wine vinegar
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 English cucumbers
- 4 carrots, peeled
Side Dish Instructions
- Whisk together oil, vinegar, garlic powder, salt, and pepper in a large bowl.
- Cut cucumbers and carrots into thin slices. Add to bowl; toss to coat.
