Ingredients

  • ⅓ cup mayonnaise
  • 2 Tbsp whole grain Dijon mustard
  • 1 lb thinly sliced low-sodium roast beef
  • ½ cup freshly shredded sharp Cheddar cheese
  • ½ (5-oz) pkg arugula
  • ½ cup thinly sliced red onion, thinly sliced

Instructions

  1. Combine mayonnaise and mustard.
  2. Stack roast beef in 8 piles. Top roast beef with mayonnaise mixture, cheese, arugula, and onion.
  3. Roll up; secure with toothpicks.

  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1½ tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 cups shredded carrots
  • 2 red bell peppers, thinly sliced

Side Dish Instructions

  1. Whisk together lemon juice, oil, honey, salt, and pepper in a large bowl. Add carrots and bell pepper; toss to coat.
