Roast Beef and Cheddar Roll-Ups
Carrot-Red Pepper SlawIngredients
- ⅓ cup mayonnaise
- 2 Tbsp whole grain Dijon mustard
- 1 lb thinly sliced low-sodium roast beef
- ½ cup freshly shredded sharp Cheddar cheese
- ½ (5-oz) pkg arugula
- ½ cup thinly sliced red onion, thinly sliced
Instructions
- Combine mayonnaise and mustard.
- Stack roast beef in 8 piles. Top roast beef with mayonnaise mixture, cheese, arugula, and onion.
- Roll up; secure with toothpicks.

- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 1½ tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- 2 cups shredded carrots
- 2 red bell peppers, thinly sliced
Side Dish Instructions
- Whisk together lemon juice, oil, honey, salt, and pepper in a large bowl. Add carrots and bell pepper; toss to coat.
