Mediterranean Chicken Salad
Basil-Balsamic StrawberriesIngredients
- 3 cups shredded rotisserie chicken
- ½ cup chopped oil-packed sun-dried tomatoes
- ⅓ cup pitted kalamata olives, chopped
- ¼ cup finely chopped red onion
- ¼ cup mayonnaise
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp dried oregano
- ½ tsp pepper
- 1 English cucumber, sliced
Instructions
- Combine chicken, tomatoes, olives, onion, mayonnaise, oil, lemon juice, oregano, and pepper. Chill until ready to serve.
- Serve with cucumber slices.

- 1 Tbsp chopped fresh basil
- 2 tsp honey
- 1 tsp balsamic vinegar
