Potato Tot Taco Casserole
Southwest Chopped Salad
Ingredients
- ½ lb ground beef
- ½ (1-oz) envelope taco seasoning mix
- 1 (10-oz) can enchilada sauce
- ½ (12-oz) pkg frozen yellow corn
- 1 cup shredded colby-Jack cheese
- ½ (32-oz) pkg frozen potato tots
- ½ (3.5-oz) pkg multicolor tortilla strips
Instructions
- Preheat oven to 375°F. Cook beef in a large skillet over medium heat until beef is browned and crumbly; drain, and return to skillet. Add taco seasoning mix, enchilada sauce, and corn; cook 3 minutes.
- Spoon mixture into a lightly greased 9-inch baking dish. Sprinkle with cheese.
- Arrange potato tots in a single layer over cheese. Bake 40 to 45 minutes or until potato tots are crisp. Sprinkle with tortilla strips.
