Potato Tot Taco Casserole

Ingredients

  • ½ lb ground beef
  • ½ (1-oz) envelope taco seasoning mix
  • 1 (10-oz) can enchilada sauce
  • ½ (12-oz) pkg frozen yellow corn
  • 1 cup shredded colby-Jack cheese
  • ½ (32-oz) pkg frozen potato tots
  • ½ (3.5-oz) pkg multicolor tortilla strips

Instructions

  1. Preheat oven to 375°F. Cook beef in a large skillet over medium heat until beef is browned and crumbly; drain, and return to skillet. Add taco seasoning mix, enchilada sauce, and corn; cook 3 minutes.
  2. Spoon mixture into a lightly greased 9-inch baking dish. Sprinkle with cheese.
  3. Arrange potato tots in a single layer over cheese. Bake 40 to 45 minutes or until potato tots are crisp. Sprinkle with tortilla strips.
