Italian Ham-and-Cheese Roll-Ups

Ingredients

  • 3 cups baby spinach, torn
  • 3 Tbsp extra virgin olive oil
  • 1½ Tbsp red wine vinegar
  • ¼ tsp dried oregano
  • 1 cup sliced tomato
  • ¾ lb thin deli-sliced ham
  • 1 (8-oz) pkg thin provolone cheese slices
  • ¼ cup thinly sliced red onion

Instructions

  1. Combine spinach, oil, vinegar, and oregano; toss and set aside. Cut tomato slices in half.
  2. Arrange ham in 4 stacks. Layer cheese, tomato, onion, and spinach on left side of each ham stack. Starting with left side, tightly roll up each stack.
  3. Wrap roll-ups in parchment paper to secure, if desired.
