Nacho-Cheese Chicken Tenders

Ingredients

  • ½ (10-oz) bag nacho-cheese flavored tortilla chips, crushed
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ Tbsp chili powder
  • ½ tsp salt
  • ¾ lb chicken tenderloins
  • ½ (9-oz) bottle zesty ranch sauce 

Instructions

  1. Preheat oven to 400°F. Place crushed chips in a shallow dish.
  2. Whisk eggs in a separate shallow dish. Stir together flour, chili powder and salt in a third shallow dish.
  3. Coat chicken in flour mixture, gently shaking off excess. Dip chicken in beaten eggs to coat; dredge in crushed chips, pressing gently to adhere.
  4. Place chicken on a lightly greased rack over a foil-lined rimmed baking sheet, and bake 15 to 20 minutes or until done. Serve with creamy queso sauce for dipping.

Side Dish Ingredients

  • ½ (24-oz) pkg frozen waffle fries
  • 1 Tbsp olive oil
  • ½ (1-oz) envelope taco seasoning mix 
  • ½ honeydew, cubed
  • ½ lb seedless red grapes

Side Dish Instructions

  1. Preheat oven to 400°F. Bake fries in a single layer on a lightly greased baking sheet until crispy; toss with oil and seasoning mix.
  2. Toss together honeydew and grapes in a large bowl.
  3. Serve fries and fruit alongside chicken tenders.
