Tomato-Avocado Salsa Grouper

Ingredients

  • 1 Roma tomato, seeded and chopped
  • 1 avocado, diced
  • 1 Tbsp fresh lime juice
  • 1 clove garlic, minced
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 2 (6-oz) grouper fillets (or use snapper or mahi mahi)
  • 1 Tbsp avocado oil (or use coconut oil)

Instructions

  1. Combine tomato, avocado, lime juice, garlic, ¼ tsp salt, and ¼ tsp pepper in a bowl.
  2. Sprinkle fish with ¼ tsp each salt and pepper. Cook fish in hot oil in a nonstick skillet 4 minutes per side or until fish flakes with a fork.
  3. Top each serving with Tomato-Avocado Salsa.

Side Dish Ingredients

  • 1 large zucchini
  • 1 clove garlic, minced
  • 1 Tbsp extra virgin olive oil
  • ½ tsp fresh lime juice
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Shave zucchini into long, thin ribbons using a vegetable peeler. Toss zucchini with garlic, oil, lime juice, and salt in a bowl.
