Tomato-Avocado Salsa Grouper
Garlicky Shaved ZucchiniIngredients
- 1 Roma tomato, seeded and chopped
- 1 avocado, diced
- 1 Tbsp fresh lime juice
- 1 clove garlic, minced
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 2 (6-oz) grouper fillets (or use snapper or mahi mahi)
- 1 Tbsp avocado oil (or use coconut oil)
Instructions
- Combine tomato, avocado, lime juice, garlic, ¼ tsp salt, and ¼ tsp pepper in a bowl.
- Sprinkle fish with ¼ tsp each salt and pepper. Cook fish in hot oil in a nonstick skillet 4 minutes per side or until fish flakes with a fork.
- Top each serving with Tomato-Avocado Salsa.

- 1 large zucchini
- 1 clove garlic, minced
- 1 Tbsp extra virgin olive oil
- ½ tsp fresh lime juice
- ¼ tsp kosher salt
Side Dish Instructions
- Shave zucchini into long, thin ribbons using a vegetable peeler. Toss zucchini with garlic, oil, lime juice, and salt in a bowl.
