Thai Chicken and Broccoli Stir-Fry
Coconut Rice
Ingredients
- ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1 tsp dark sesame oil
- 1 tsp olive oil
- 1 tsp minced ginger
- 1 (12-oz) pkg broccoli florets
- ½ organic red bell pepper, thinly sliced
- 4 green onions, cut into 2-inch pieces
- 2 tsp fish sauce (or use low-sodium soy sauce)
- 1 tsp fresh lime juice
- 1 tsp chopped fresh basil
Instructions
- Cook chicken in hot oils in a large nonstick skillet or wok over medium-high heat 5 minutes or until browned.
- Add ginger, broccoli, bell pepper, and onions; sauté 4 to 5 minutes or until vegetables are tender. Add fish sauce, lime juice, and basil. Serve over Coconut Rice recipe.
Side Dish Ingredients
- ⅓ cup long-grain brown rice, rinsed
- ⅔ cup coconut milk
- ⅛ tsp salt
Side Dish Instructions
- Bring rice, coconut milk, and salt to a boil in a medium saucepan over medium-high heat. Cover, reduce heat to low, and simmer 40 minutes or until liquid is absorbed and rice is tender.
