Thai Chicken and Broccoli Stir-Fry

Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 tsp dark sesame oil
  • 1 tsp olive oil
  • 1 tsp minced ginger
  • 1 (12-oz) pkg broccoli florets
  • ½ organic red bell pepper, thinly sliced
  • 4 green onions, cut into 2-inch pieces
  • 2 tsp fish sauce (or use low-sodium soy sauce)
  • 1 tsp fresh lime juice
  • 1 tsp chopped fresh basil

Instructions

  1. Cook chicken in hot oils in a large nonstick skillet or wok over medium-high heat 5 minutes or until browned.
  2. Add ginger, broccoli, bell pepper, and onions; sauté 4 to 5 minutes or until vegetables are tender. Add fish sauce, lime juice, and basil. Serve over Coconut Rice recipe.

  • ⅓ cup long-grain brown rice, rinsed
  • ⅔ cup coconut milk
  • ⅛ tsp salt

Side Dish Instructions

  1. Bring rice, coconut milk, and salt to a boil in a medium saucepan over medium-high heat. Cover, reduce heat to low, and simmer 40 minutes or until liquid is absorbed and rice is tender.
