Beef and Bean Burritos
Spicy Jicama SticksIngredients
- 1 (8.8-oz) pouch microwavable brown rice
- ½ lb lean ground beef
- ¼ tsp ground cumin
- ¼ tsp pepper
- 3 burrito-size flour tortillas (preferably whole wheat)
- ¾ cup BPA-free pinto beans, drained and rinsed
- ¼ cup sour cream
- ¾ cup shredded Monterey Jack cheese
- 1 cup shredded iceberg lettuce
- 3 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- ¾ cup fresh salsa
Instructions
- Cook rice according to package directions; keep warm.
- Cook beef in a greased nonstick skillet over medium-high heat until no longer pink; stir in cumin and pepper.
- Heat tortillas according to package directions; mash beans with a potato masher or pulse in a food processor until smooth.
- Spread beans on tortillas. Spoon beef down center of each tortilla; top with rice, sour cream, cheese, lettuce, and cilantro; roll up. Serve with salsa.
Side Dish Ingredients
- 1 jicama (about 1 lb)
- 2 Tbsp fresh lime juice
- ½ tsp chili powder
- ⅛ tsp cayenne pepper (or more, if desired)
- ⅛ tsp salt
Side Dish Instructions
- Peel jicama, and cut in half lengthwise. Cut into 1-inch-thick sticks.
- Toss together jicama and lime juice; chill 15 minutes.
- Combine chili powder, cayenne pepper, and salt; sprinkle over jicama.
