Melt-in-Your-Mouth Chicken

Lemon Rice Pilaf and Steamed Green Beans

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ⅓ cup sour cream
  • ½ cup shredded Parmesan cheese
  • ½ tsp garlic powder

Instructions

  1. Preheat oven to 375°F. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Place chicken in a lightly greased 9-inch baking dish.
  3. Stir together sour cream, cheese, and garlic powder; spread over chicken.
  4. Bake 20 minutes. Increase oven temperature to broil, and broil 2 to 3 minutes or until cheese is browned and bubbly.

Side Dish Ingredients

  • 1 Tbsp butter
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ tsp lemon zest
  • ½ Tbsp lemon juice
  • ½ (15-oz) pkg frozen green beans

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add rice, and sauté 1 minute. Stir in broth, lemon zest, and juice.
  2. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  3. Steam green beans according to package directions; season with salt and pepper to taste.
