Melt-in-Your-Mouth Chicken
Lemon Rice Pilaf and Steamed Green BeansIngredients
- ¾ lb boneless, skinless chicken breasts
- ⅓ cup sour cream
- ½ cup shredded Parmesan cheese
- ½ tsp garlic powder
Instructions
- Preheat oven to 375°F. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Place chicken in a lightly greased 9-inch baking dish.
- Stir together sour cream, cheese, and garlic powder; spread over chicken.
- Bake 20 minutes. Increase oven temperature to broil, and broil 2 to 3 minutes or until cheese is browned and bubbly.

- 1 Tbsp butter
- 1 cup long-grain white rice
- 2 cups chicken broth
- ½ tsp lemon zest
- ½ Tbsp lemon juice
- ½ (15-oz) pkg frozen green beans
Side Dish Instructions
- Melt butter in a large saucepan over medium heat; add rice, and sauté 1 minute. Stir in broth, lemon zest, and juice.
- Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
- Steam green beans according to package directions; season with salt and pepper to taste.
