Sicilian Fish
Caprese SaladIngredients
- 12 frozen Parmesan-crusted fish fillets
- 2 Tbsp minced garlic
- 1 Tbsp olive oil
- ½ (5-oz) pkg baby spinach
- 1 (14.5-oz) can petite-diced tomatoes with garlic
- ½ cup pitted green olives, coarsely chopped
- ½ cup pitted kalamata olives
- ½ tsp crushed red pepper flakes
- 2 Tbsp capers
Instructions
- Bake fillets according to package directions.
- Meanwhile, sauté garlic in hot oil in a large skillet over medium-high heat 30 seconds. Stir in spinach. Add tomatoes and remaining ingredients except capers. Simmer over medium heat 2 to 3 minutes. Season with salt and pepper to taste.
- Spoon saucy spinach over 2 fillets on each plate. Sprinkle with capers.
Side Dish Ingredients
- 2 large beefsteak tomatoes, sliced
- 1 pint multicolored grape tomatoes (or use cherry tomatoes)
- 8 oz burrata cheese (or use other favorite soft cheese)
- ¼ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar (or use balsamic glaze)
- ¼ cup fresh basil leaves (optional)
Side Dish Instructions
- Arrange sliced tomatoes on a platter. Scatter grape tomatoes on platter. Use 2 spoons to dollop cheese on tomatoes. Drizzle with oil; drizzle with vinegar. Sprinkle with coarse salt and freshly ground pepper to taste. Add basil, if desired.
