Grilled Teriyaki Salmon
Ginger Fruit Salad
Ingredients
- 1 Tbsp coconut aminos
- 1 tsp sesame oil
- 1 tsp raw honey
- 1 clove garlic, minced
- ⅛ tsp ground ginger
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- 2 (6-oz) salmon fillets
- 1 tsp coconut oil
Instructions
- Combine coconut aminos, sesame oil, honey, garlic, ginger, salt, and pepper in a shallow dish or zip-top plastic bag. Add fish; turn to coat. Chill 1 hour.
- Preheat grill to medium-high heat. Place fish on a grill rack coated with coconut oil. Grill, covered, 6 to 10 minutes or until fish flakes with a fork, turning once.
Side Dish Ingredients
- 1 cup chopped pineapple
- 1 small mango, peeled and chopped
- ½ apple, cored and chopped
- 1½ Tbsp chopped fresh mint
- ½ tsp raw honey
- ⅛ tsp ground ginger
Side Dish Instructions
- Combine pineapple, mango, apple, and mint in a large bowl.
- Microwave honey in a microwavable small bowl at HIGH 15 seconds or until melted. Add ginger; stir until ginger is dissolved. Add honey mixture to fruit; toss.
