Mediterranean Burgers
Chilled Red Grapes
Ingredients
- 2 whole wheat bakery hamburger buns
- 1 (2-count) pkg fresh plant-based burger patties
- ½ cup thinly sliced red onion
- 2 tsp olive oil
- ¼ cup sun-dried tomatoes in oil, drained
- ¼ cup plain hummus
- ⅔ cup baby arugula
Instructions
- Preheat broiler. Place buns on a baking sheet; broil until toasted.
- Cook patties according to package directions.
- Meanwhile, sauté onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until lightly browned.
- Reduce heat to medium; stir in tomatoes. Cook 1 minute or until thoroughly heated. Spread hummus on buns, and top with patties, onion mixture, and arugula.

- 1 cup seedless red grapes
Side Dish Instructions
- Chill grapes until ready to serve.
