Steak Pizzaiola
Creamy Polenta and Sautéed BroccoliniIngredients
- 1¼ cups marinara sauce
- ½ onion, thinly sliced
- ½ yellow bell pepper, thinly sliced
- ¾ lb London broil
Instructions
- Combine all ingredients in a 3- or 4-quart slow cooker. Cover and cook on LOW 8 hours or until beef is tender.
- Thinly slice beef across the grain.
Side Dish Ingredients
- 1 cup low-sodium chicken broth
- ¼ cup coarse-ground polenta
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 2 oz ⅓-less-fat cream cheese, cut into pieces
- 1 Tbsp butter
- 1 clove garlic, minced
- 1 bunch Broccolini, trimmed (or use broccoli)
- ¼ tsp crushed red pepper
- 2 Tbsp water
- 1 Tbsp olive oil
Side Dish Instructions
- Bring broth to a boil in a saucepan over medium heat; slowly whisk in polenta and ⅛ tsp each salt and pepper.
- Reduce heat to low; simmer 25 minutes, stirring occasionally.
- Stir in cream cheese and butter; cook 5 minutes or until creamy.
- Meanwhile, cook garlic, Broccolini, red pepper, ⅛ tsp each salt and pepper, and water in hot oil in a large skillet, covered, over medium-high heat 5 minutes. Uncover and sauté 5 minutes or until liquid evaporates and Broccolini is tender.
