Chicken and Spinach Salad
Cream Cheese and Black Pepper ToastsIngredients
- 1½ Tbsp olive oil
- 1½ Tbsp apple cider vinegar
- 1½ tsp Dijon mustard
- ½ (8-oz) pkg thin green beans
- 1 (5-oz) pkg spinach, coarsely chopped
- ½ (5-oz) pkg arugula
- ½ (14-oz) can quartered artichoke hearts, drained
- 2 Roma tomatoes, thinly sliced
- Reserved 1½ cups shredded chicken (from Greek Chicken Thighs recipe)
- 1 green onion, thinly sliced
Instructions
- Whisk together oil, vinegar, and mustard in a large bowl.
- Steam green beans according to package directions; cut in half and add to bowl.
- Add spinach, arugula, artichokes, tomatoes, chicken, and green onions; toss to coat.
Side Dish Ingredients
- ½ (14-oz) French baguette, cut into ½-inch-thick slices
- 2 oz ⅓-less-fat cream cheese, softened
- ½ Tbsp butter, softened
- ¼ tsp pepper
Side Dish Instructions
- Preheat broiler. Place bread slices on a baking sheet.
- Stir together cream chese, butter, and pepper; spread over bread. Broil 3 minutes or until toasted.
