Chicken and Spinach Salad

Ingredients

  • 1½ Tbsp olive oil
  • 1½ Tbsp apple cider vinegar
  • 1½ tsp Dijon mustard
  • ½ (8-oz) pkg thin green beans
  • 1 (5-oz) pkg spinach, coarsely chopped
  • ½ (5-oz) pkg arugula
  • ½ (14-oz) can quartered artichoke hearts, drained
  • 2 Roma tomatoes, thinly sliced
  • Reserved 1½ cups shredded chicken (from Greek Chicken Thighs recipe)
  • 1 green onion, thinly sliced

Instructions

  1. Whisk together oil, vinegar, and mustard in a large bowl.
  2. Steam green beans according to package directions; cut in half and add to bowl.
  3. Add spinach, arugula, artichokes, tomatoes, chicken, and green onions; toss to coat.

Side Dish Ingredients

  • ½ (14-oz) French baguette, cut into ½-inch-thick slices
  • 2 oz ⅓-less-fat cream cheese, softened
  • ½ Tbsp butter, softened
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat broiler. Place bread slices on a baking sheet.
  2. Stir together cream chese, butter, and pepper; spread over bread. Broil 3 minutes or until toasted.
